Omlette with fresh herbs and cheese, miniature roasted potatoes and a garnish of parsley.
There are options to this but its a good starting place.

Huevos rancheros can be made similarly but obviously with Mexican spicing and served with refried beans and a tortilla.

Also very nice.


Guacamole is very good fresh, on the topic of avacado and in the same part of the world.

Love Avocado, has to be properly ripe though. Should feel soft before you cut it open.
On it's own with a bit of vinegar or with a prawn cocktail is best.

I highly recommend Shakshuka eggs.
Basically poached eggs baked in a tomato sauce with as much or little chilli as you want.

I like seasoning. I like herbs and spices. But the only seasoning scrambled egg needs is salt and black pepper. Nothing more, nothing less.

Never liked avocado, or understood the world's worst kinder surprise.

Worked at a place a few years ago that had a decent work restaurant and ordered poached eggs on toast off the breakfast menu which looked really nice, with some sort of light coloured guacamole on the toast. Tasted fucking lovely, turned out it was 'smashed avocado'.

I've never told anybody this before, not even my family and I still feel ashamed and dirty.

Scrambled with truffle oil and chives. Occasionally witrh smoked salmon flakes.

I aslo make a mean crepe. I use mixed grain flour mixed with cornflour with my eggs. Fill with emmental and spinach and epaule ham.

Christmas morning for us was/is omelettes made from the leftover cheese and meat from the platters the night before.

My thoughts have turned there because its -17C, (-25 wind chill) with an up to 10 inches of snowf today. I don't need any of that until Christmas.

Also always make my own mayonaisse with decent eggs.

I put Lea & Perrins and a sprinkling of whole black peppercorns in my scrambled eggs and the slightest piece of blue cheese if I've got some to hand - not a lot; virtually just wave it over the mixing bowl before the eggs get beat.

Started out as an experiment when the kids were living with me in The Netherlands and we tried all sorts of weird weekend breakfast concoctions (most never worked and ended up in the bin/cat's bowl), but a few, like the one just mentioned, stuck.

Couple of poached eggs on sourdough with Avacado - love that.

Weekdays tends to be fried eggs on whole meal though.
